Hatch Green Chile Stew Recipe
Ingredients:
- 2 pounds pork shoulder, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 onion, diced
- 4 cloves garlic, minced
- 2 cups roasted Hatch green chiles, peeled and chopped (fresh or canned)
- 4 cups chicken broth
- 2 large russet potatoes, peeled and cubed
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- ½ teaspoon smoked paprika
- Salt and pepper to taste
- Fresh cilantro, for garnish
- Lime wedges, for serving
Directions:
- Brown the Pork: In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the cubed pork and brown on all sides. Remove the pork and set aside.
- Cook the Onion and Garlic: In the same pot, add the diced onion and garlic. Sauté until softened and fragrant, about 3 minutes.
- Add the Chiles and Spices: Stir in the chopped Hatch green chiles, cumin, oregano, and smoked paprika. Cook for another 2 minutes to release the flavors.
- Simmer the Stew: Return the browned pork to the pot, add the chicken broth and cubed potatoes, and bring to a boil. Lower the heat and let the stew simmer for 45 minutes to an hour, until the pork is tender and the flavors are well developed. Season with salt and pepper to taste.
